My daughter, Lexie, has shown an interest in cooking over the past few months. She helps my wife make dinner every night and was excited to enter her first cooking contest. We had to make a special grocery run to get the ingredients so she could help make her favourite soup:

Stracciatella Chicken Soup

1 tsp of butter
1/2 cup of diced carrots
1/4 cup of diced celery
1 tbsp of chopped parsley
1 cup of ditali Barilla pasta
8 cups of chicken broth
1 cube of chicken bouillon
Salt & pepper to taste
1/4 cup of cooked, shredded chicken (optional)
1 large egg
1 tbsp of Italian bread crumbs
1 tbsp of shredded Parmigiano Reggiano Cheese

Saute the carrots and celery in butter until softened. Next, add chicken broth, parsley, chicken bouillon and bring to a boil. Then, add ditali pasta and cook al dente. Add cooked chicken (optional) and salt & pepper to taste.

Mix the egg, Parmigiano and Italian bread crumbs in a bowl and stir them into the soup before serving.
