🧀🥦 Cheese & Broccoli Muffins — perfect for little hands

Makes 12 mini muffins

Ingredients:

1 cup broccoli florets, steamed + finely chopped
1 cup grated cheese (cheddar works great)
1½ cups self-raising flour
2 eggs
½ cup milk
3 tbsp olive oil or melted butter
Pinch of salt (optional)

Method:

Preheat oven to 180°C (350°F). Grease or line a muffin tin.
Steam broccoli until soft, then chop finely.
In a bowl, whisk eggs, milk, and oil together.
Add flour and a pinch of salt, mix until just combined.
Fold in the broccoli and grated cheese — don't overmix.
Spoon batter into muffin tin, filling each about ¾ full.
Bake for 18–20 minutes, until golden and a skewer comes out clean.
Cool for 5 minutes before serving.

Tip: Freezer-friendly! Make a batch and freeze extras for easy snacks.

🥕🌾 Carrot Cake Porridge Tray Bake Bars

Makes 12–16 bars

Ingredients:

2 cups rolled oats
1 cup grated carrot (about 2 medium carrots)
2 ripe bananas, mashed
2 eggs
¼ cup milk (any kind)
2 tbsp honey or maple syrup (optional, to taste)
1 tsp cinnamon
½ tsp ground ginger (optional)
1 tsp baking powder
2 tbsp melted butter or coconut oil
Handful of raisins or chopped walnuts (optional)

Method:

Preheat oven to 180°C (350°F). Line a small baking tray (approx. 20x20cm / 8x8in) with parchment paper.
In a large bowl, mash the bananas until smooth.
Add eggs, milk, melted butter, and honey/maple syrup. Mix well.
Stir in grated carrot, cinnamon, and ginger.
Fold in oats and baking powder until fully combined.
Add raisins or walnuts if using.
Pour mixture into the tray and spread evenly.
Bake for 20–25 minutes, until firm and golden on top.
Cool completely in the tray before slicing into bars.

Tip: Store in the fridge for up to 5 days, or freeze individual bars for grab-and-go snacks.

Whether breakfast, snack or a little dessert, these apple and oat pancakes are a great choice for babies just starting their baby-led weaning journey.

🍎 Fibre

🍎 Protein

🍎 Vitamin C, iron + calcium

🍎 Antioxidants

Makes 1 portion. You’ll need:

🧑‍🍳 1 grated apple

🧑‍🍳 ¼ cup self-raising flour

🧑‍🍳 ¼ cup rolled oats

🧑‍🍳 ½ tsp baking powder

🧑‍🍳 1 egg

🧑‍🍳 ¼ cup milk

🧑‍🍳 ½ tsp cinnamon

🧑‍🍳 a pinch of nutmeg

How to make them:

Grate the apple with the skin on and leave to the side

Add oats, flour and baking powder to a blender and pulse into a coarse flour

Mix in the egg, milk, cinnamon and nutmeg

In a lightly greased pan on medium heat, scoop 1 tbsp of the mixture into the pan

Let is cook for 2 - 3 minutes and then flip

Repeat with the rest of the batter and serve warm
