2 Layers Moist Peanut Butter Cake

Ingredients

For the Cake
• 2½ cups all-purpose flour — 315g
• 1 cup granulated sugar — 200g
• 1/2 cup brown sugar — 100g
• 1 cup creamy peanut butter — 250g
• 1 cup butter — 227g
• 4 large eggs
• 1 cup milk — 240ml
• 1/2 cup sour cream — 120g
• 2 tsp vanilla extract
• 2 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt

For the Peanut Butter Frosting
• 1 cup butter — 227g
• 1 cup creamy peanut butter — 250g
• 4 cups icing sugar — 480g
• 4–6 tbsp milk — 60–90ml
• 1 tsp vanilla extract

Optional Toppings
• Crushed peanuts
• Chocolate drizzle
• Peanut butter cups

Instructions

Preheat oven to 170°C. Grease and line two 8-inch cake pans.

In a bowl, whisk together flour, baking powder, baking soda, and salt.

In another large bowl, cream butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.

Add eggs one at a time, mixing well after each addition.

Mix in vanilla extract and sour cream.

Add the dry ingredients gradually, alternating with milk. Mix until smooth and creamy.

Divide batter evenly into the prepared pans.

Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

Allow cakes to cool completely before frosting.

For the frosting, beat butter and peanut butter until creamy.

Add icing sugar gradually and mix until fluffy.

Add vanilla and milk until you get a smooth spreadable consistency.

Layer the cakes with frosting in between, then cover the entire cake with the remaining frosting.

Decorate with crushed peanuts, chocolate drizzle, or peanut butter cups if desired.

Chinese Egg Cake

Ingredients
• 4 large eggs
• 3/4 cup granulated sugar — 150g
• 1 cup cake flour — 125g
• 1/4 cup milk — 60ml
• 1/4 cup vegetable oil or melted butter — 60ml
• 1 tsp vanilla extract
• 1/2 tsp baking powder
• Pinch of salt

Instructions

Preheat oven to 170°C. Grease and line an 8-inch round pan or loaf pan.

In a large bowl, beat eggs and sugar together for 6–8 minutes until pale, thick, and fluffy.

Warm the milk slightly and mix with oil and vanilla extract.

Sift together cake flour, baking powder, and salt.

Fold the dry ingredients gently into the egg mixture in batches.

Add the milk mixture gradually and fold carefully to avoid deflating the batter.

Pour batter into the prepared pan and tap lightly to remove air bubbles.

Bake for 25–30 minutes or until golden brown and a toothpick inserted comes out clean.

Allow the cake cool slightly before removing from the pan.

Serve warm or chilled.

Tips
• Beat the eggs very well to achieve the fluffy texture.
• Fold gently to keep the batter airy.
• Do not overbake to maintain softness and moisture.

🌸 1. Vanilla Butter Sandwich Cookies

• Unsalted butter – 1 cup (250g), softened
• Powdered sugar – ¾ cup (90g)
• Egg yolks – 2
• Vanilla extract – 2 tsp
• All-purpose flour – 2 cups (250g)
• Cornstarch – ½ cup (60g)
• Baking powder – ½ tsp
• Pinch of salt

Filling
• Butter – ¼ cup (60g)
• Powdered sugar – 1 cup (120g)
• Vanilla extract – ½ tsp
• Milk – 1 tbsp

Preparation
Cream butter and sugar until fluffy. Add yolks and vanilla. Sift flour, cornstarch, baking powder, and salt, then fold into the mixture to form a soft dough. Chill for 30 minutes. Roll out to ¼ inch thickness and cut round shapes. Bake at 170°C for 10–12 minutes. Cool and sandwich with vanilla cream. Dust with icing sugar.

Filling
• Butter – ¼ cup (60g)
• Powdered sugar – ¾ cup (90g)
• Custard powder – 1 tbsp
• Milk – 1 tbsp

Preparation
Beat butter and sugar until light. Add egg and vanilla. Mix in flour, custard powder, and baking powder. Roll dough and press with patterned mold. Bake at 175°C for 12–15 minutes until golden. Sandwich with custard buttercream.

Preparation
Cream butter and sugar, add yolks and vanilla. Mix flour, cornstarch, and baking powder, then combine into a soft dough. Roll out and cut circles. Bake at 160°C for 10–12 minutes. When cool, sandwich with caramel and roll edges in coconut.

Preparation
Cream butter and sugar until smooth. Add yolk and vanilla. Sift in flour and cornstarch; mix to form soft dough. Roll out and cut round shapes; cut a hole in half for the tops. Bake at 170°C for 10–12 minutes. Cool and sandwich with jam.
