The Settlers proved to be excellent horsemen, raising cattle in the vast plains. In addition to raising cattle, the

Gauchos, as these Southern Brazilian ranchers became known, farmed fresh fruits and vegetables. They also developed their own simple, yet delicious style of grilling known as Churrasco ( shoo.rhas'co). Large cuts of prime meats were skewered and slowly roasted over open fire pits. When groups of families would gather for meals, the Gauchos would carry the succulent skewers of meat, along with the platters of fruits and vegetables to the table. Using traditional knives which they wore on their belts, they'd slice thin, tender pieces of meat directly onto plates. They served the skewered portions continuously to each person "Rodizio-style - which in Portuguese means, "all around." Our traditional Rodizio all-you-can-eat dining experience features continuous tableside service of the finest cuts of beef, pork, and poultry. The sizzling hot meats are presented in a rotating fashion by our servers on the actual cooking skewers and then each selection is cut and plated right at your table. Completing your dining experience is a delicious hot and cold buffet.
