Summer Peach & Watermelon Salad 🍉

The perfect fresh & easy summer recipe!

🥗 Ingredients:
2 cups watermelon (cubed)
2 ripe peaches (sliced)
½ cup feta cheese (crumbled)
Fresh mint leaves (chopped)
1 tbsp olive oil
1 tbsp lime juice
Pinch of salt
Optional: honey drizzle 🍯

Broccoli and Mushrooms Recipe
1. Ingredients:

1 head of broccoli (cut into florets)
2 cups mushrooms (sliced, preferably cremini or button mushrooms)
2 tbsp olive oil
3 cloves garlic (minced)
1/4 cup vegetable broth (or water)
1 tbsp soy sauce (optional for extra flavor)
Salt and pepper to taste
1/4 tsp red pepper flakes (optional for a kick)
1 tbsp lemon juice (for garnish)
Fresh parsley (chopped, for garnish)
2. Directions:

Heat olive oil in a large skillet or pan over medium heat.
Add the sliced mushrooms to the pan and sauté for about 5-7 minutes until they become golden brown and tender.
Add the garlic and cook for 1 minute until fragrant.
Add the broccoli florets to the pan and stir to combine with the mushrooms.
Pour in the vegetable broth and soy sauce (if using), then cover the pan and cook for 5-6 minutes, until the broccoli is tender but still crisp.
Season with salt, pepper, and red pepper flakes (if using).
Remove from heat and drizzle with lemon juice.
Garnish with fresh parsley before serving.

Cheesy Chicken and Spinach Stuffed Peppers
Ingredients:

2 cups leftover rotisserie chicken, shredded
4 bell peppers, halved and deseeded
1 cup cooked quinoa or rice
1 cup baby spinach, chopped
1/2 cup cream cheese, softened
1/2 cup shredded mozzarella cheese
1/4 cup Parmesan cheese
2 cloves garlic, minced
1/2 teaspoon onion powder
1/2 teaspoon paprika
Salt and pepper to taste
1 tablespoon olive oil
Directions:

Preheat oven to 375°F (190°C).
Heat olive oil in a pan over medium heat. Add garlic and sauté until fragrant.
Stir in shredded rotisserie chicken, cooked quinoa (or rice), spinach, cream cheese, mozzarella, Parmesan, onion powder, paprika, salt, and pepper. Mix until well combined and creamy.
Stuff the mixture evenly into the bell pepper halves and place them in a baking dish.
Cover with foil and bake for 20 minutes.
Remove foil and bake for another 10 minutes until cheese is bubbly and peppers are tender.
Serve hot and enjoy!
