A Jollibee-Style Chickenjoy (Copycat Recipe) —
Known for its super crispy coating, juicy inside, and slightly garlicky savory flavor.
Jollibee-Style Fried Chicken (Chickenjoy)
Marinade (Juicy & Flavorful)
Ingredients:
• Chicken (8–10 pieces, bone-in) – 1 kg
• Garlic (crushed) – 1 tbsp
• Salt – 1½ tsp
• White pepper – 1 tsp
• Soy sauce – 1 tbsp
• Sugar – 1 tsp
• Chicken powder – 1 tsp (optional)
• Water – ½ cup
Method:
1️⃣ Mix marinade ingredients.
2️⃣ Add chicken, massage well.
3️⃣ Cover and marinate at least 4 hours (overnight best).
Jollibee flavor is more garlicky than KFC.
Crispy Coating Mix
• All-purpose flour – 2 cups
• Cornstarch – ½ cup
• Garlic powder – 1 tsp
• White pepper – 1 tsp
• Paprika – 1 tsp
• Salt – 1 tsp
• Baking powder – 1 tsp (for crispiness)
Mix thoroughly.
Dredging Process (Key Step!)
1️⃣ Remove chicken from marinade.
2️⃣ Coat in flour mixture.
3️⃣ Dip quickly back into marinade or cold water.
4️⃣ Coat again in flour mixture.
5️⃣ Press flour onto chicken to form flakes.
6️⃣ Rest 10 minutes before frying.
Double coating = extra crunch.
Frying
• Oil temperature: 170°C
• Fry 12–15 minutes until golden brown.
• Internal temp: 75°C
Drain on rack (not paper towel).
Jollibee-Style Chicken Gravy (Very Important!)
Ingredients:
• Butter – 2 tbsp
• Flour – 2 tbsp
• Chicken stock – 2 cups
• Soy sauce – 1 tsp
• Black pepper – ½ tsp
• Chicken powder – ½ tsp
Method:
1️⃣ Melt butter.
2️⃣ Add flour, cook 1–2 minutes.
3️⃣ Slowly add stock while whisking.
4️⃣ Add soy sauce & seasoning.
5️⃣ Simmer until thick.
Smooth, savory, slightly peppery.
Chef Secrets for Authentic Taste
✔ Add small pinch sugar to flour mix.
