Skip the usual banana bread and turn them into these Fluffy Banana Bread Pancakes instead. Soft, fluffy, and packed with cozy banana bread flavours, each pancake has golden buttery edges, melty chocolate chips, and sweet caramelized banana in every bite. Top them with butter and maple syrup for the ultimate weekend breakfast that everyone will be asking for seconds of.
🥞 Fluffy Banana Bread Pancakes Recipe
Ingredients
• 150g all-purpose flour
• 3 tbsp brown sugar
• 2 tsp baking powder
• ½ tsp baking soda
• 1 tsp cinnamon
• ¼ tsp salt
• 1 large egg
• 2 tbsp unsalted butter, melted (plus extra for the pan)
• 1 tsp vanilla extract
• 240ml cold buttermilk
• 2 ripe bananas, mashed
• ¼ cup chocolate chips
For Serving
• Maple syrup
Method
1. In a large bowl, mash the ripe bananas until mostly smooth, leaving a few small chunks for texture. Whisk in the egg, melted butter, vanilla extract, and buttermilk until well combined.
2. In a separate bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
3. Pour the wet ingredients into the dry ingredients and gently fold with a rubber spatula until just combined. Don't overmix. A few lumps are exactly what you want for fluffy pancakes.
4. Heat a non stick pan over medium heat and melt about ½ tablespoon of butter.
5. Scoop about ½ cup of batter into the pan for each pancake, or adjust the size to your preference. As soon as the batter is in the pan, sprinkle a few chocolate chips on top before flipping.
6. Cook until bubbles appear on the surface and the edges look set. Flip and cook until both sides are beautifully golden brown.
7. Transfer to a plate and keep warm. Repeat with the remaining batter, adding more butter to the pan as needed.
8. Serve warm with butter, maple syrup, extra banana slices, and a sprinkle of chocolate chips for the perfect finishing touch.
