I’m a hobby baker and constantly test little baking tricks to see what actually makes a difference and what’s just internet nonsense.

A few that genuinely work:

• Freeze your cookie dough before baking
Even 20–30 minutes helps. The cookies spread less, bake thicker, and bake more evenly.

• Start muffins at a higher oven temp
I preheat hotter than the recipe says, bake muffins for about 10–15 minutes, then lower the temp for the rest of the bake. That’s how you get those tall bakery-style muffin tops.

• Add a tiny pinch of cinnamon to chocolate desserts
Brownies, chocolate cake, chocolate chip cookies. It doesn’t make them taste like cinnamon — it just adds warmth and depth.

• Slightly underbake cookies
Take them out when the centers still look a little soft. They’ll finish setting on the pan instead of turning dry.

• Real vanilla honestly matters
Especially in recipes with simple flavors where vanilla is one of the main ingredients.

Half of baking is the recipe.
The other half is the little things people learn after years of making desserts at home.

If you bake a lot, save this for later because I swear the cookie dough trick matters.
