Tell me your story! One of the most important parts of my role in communications is helping teams share their stories.
Not polished, perfect stories, but real ones.

I’m so lucky I get to witness the team coming together for volunteer events. Or a chef finding a creative way to reduce food waste. A manager recognizing their team in a meaningful way.

These moments are happening every day across Eurest. When we capture and amplify them, we inspire others to do the same.

May is Asian American Pacific Islander Heritage Month, so I am inviting some of our chefs and associates to share their culture and stories. Today’s feature is Sous Chef Johnny Duong :

“I began my journey with Eurest back in year 2021 as a line cook and as of today, I am the Sous Chef at Fluke Park Cafe48 under the guidance and leadership of Shane Sebesta. I am a first generation Vietnamese American. My inspiration for food came from my mother, who showed me the authenticity of Vietnamese Cuisine at a young age. My favorite dish from my culture is Bun Bo Hue, which translates to Spicy Beef Noodle Soup (see photo).

What I would love for people to know about Asian American Pacific Islander Month is that, although the food might be different than you are accustomed to, be open-minded to try new things because every new experience opens new doors.

When I’m not working, I enjoy watching my favorite football team New Orleans Saints play on Sunday, also hanging out with my beautiful wife and 5 kids spending time cooking as a family together.”

Up to 40% of food in the U.S. is wasted, and when it ends up in landfills, it becomes a major source of methane emissions. Today we celebrate Stop Food Waste Day, but reducing food waste is a daily practice for us.

“Waste Not” is our chef‑led program that teaches our teams to track and measure food waste, understand what’s being wasted and create root-to-stem recipes to prevent it. This helps us to reach our sustainability goals and implement smarter kitchen operations. Pictured here are two examples:

1) Pan-seared scallops served over puree made from leftover ends of apples, ground cardamom, toasted cashew crumbles and butternut squash. Served with loose segments of cauliflower, broccoli, and lemon zest, garnished with parsley leftovers. 📸 , Chef Johnny Duong

2) Southern Fried Old Bay Soft Shell Crab served over a 100% waste-free zucchini fritter, corn cob velouté, and roasted corn chow chow. The whole crab is used in this recipe and is locally sourced. 📸 , Chef Chris Green

Beautiful day walking with my work friends from to raise money for supporting programs and training to help those with Autism and Down Syndrome to get employment and to live independently. Big thanks to my friends from American Airlines, Amazon and Chevron for showing up to walk with us!

My LA team handed out flowers with notes attached that said, “Thank you for being a buddy” and on the inside: “you’re a good person.” You can’t believe how people’s faces light up at this simple gesture. It makes me want to do it every day!

EARTH MONTH POST IDEA: Earth Month is a great time to spotlight the sustainability choices you’re already making in the café, like this example from .

You could post something like this:
This week, we’re featuring [MENU ITEM] made with [LOCAL/SUSTAINABLE INGREDIENT/CALL-OUT]. Stop by between [TIME] and try it.

Marketing tip: Be sure to call it out in your signage or PIDs: “Earth Month Feature: [local/sustainable callout]” and feature recipe cards when available.

💙 April is Impact & Inclusion Month and Autism Awareness Month, and I’m excited to be walking in the Best Buddies Friendship Walk to support inclusion for people with intellectual and developmental disabilities (IDD).
Best Buddies walks take place in major cities across the U.S., so whether you’re local or elsewhere, there’s a way to get involved. You can join an existing Eurest team or even start your own.
I’m serving as the Best Buddies point of contact through PACC, so feel free to reach out with questions about joining, volunteering, or supporting.

Some highlights from my work trip to Washington last week: got over 13,000 steps on my campus tour (woot), didn’t have to fly to Tokyo to see cherry blossoms (just a quick trip to the Microsoft parking lot captured that magic!), got to eat incredible food, see Peanut the Elephant, meet some really cool people and have interesting dinner conversations.
