VENTRICINA !

Our VENTRICINA is made from pork belly, rough ground, perfumed with garlic, black pepper, paprika, and a good dose of Vietnamese chilli peppers, and aged for at least 2 months.

Beautifully spice, excellent on a charcuterie board, and perfect to incorporate in a pasta, and many other culinary preparations.

PAVÉ AU POIVRE ! ... another big artisan sandwich.

Our PAVÉ AU POIVRE is a delightful ground pork composition, coated in a black peppercorn crust, fermented, and aged for several months in our curing chamber.

The result is a tangy, peppered, charcuterie, excellent on a charcuterie board, and fabulous on a sandwich with our in-house pickles and our Dijon mustard.

Our SAUCISSE CHOUCROUTE is a meal of a sandwich, assembled with Hoi An Salaisons Toulouse or garlic sausage, our in-house choucroute ("sauerkraut", in German), with a good dose of our in-house Dijon mustard, served on a toasted baguette.
