Big win for the bees, big loss for me.

Honey crystallizes itself when the humidity levels change. It happens a lot when a cold front comes through, rain comes, etc. Google for yourself what crystallized honey looks like. It’s actually really cool looking. However, it’s not the honey people like you and I like to eat. To “de-crystallize” honey, it must be heated up, then cooled and it’ll be normal honey. Crystallization is healthy for the honey. But then again, we don’t like to eat it.

We store our honey in 5 gallon buckets until ready to be bottled, then it becomes bottled and handed to you. If the honey in the 5 gallons crystallize, we use heating bands around the bucket to warm it up. That process takes 24 hours-48 hours. I have 2 markets this week for honey, and my stock was low. After opening 2, 5 gallon buckets of crystallized honey, I wanted to speed the long process up into a few hours. So, I cranked the heat up.

Little did I know, if that happens, A) Honey can be BURNT and taste BURNT, and completely change its color, but, the heat could also burn buckets. After bottling both buckets of honey, I was left with burnt honey that cannot and WILL NOT be sold. Once it crystallizes, I’ll just give it right back to the bees as they can indulge themselves with honey they have already produced. See pictures for reference.
