When the weekly calendar is completely flat-out, we lean hard into simple one-pot dinners.

This creamy green curry is packed with veggies, family-approved, and gives you a solid 40 minutes of hands-off time while it bakes.

Best of all? It’s all done in our absolute favourite cast iron casserole pot, meaning it goes straight from the oven to the table, and you only have one actual dish to wash up.

1. Add 2 cups rice, 4 cups chopped vegetables and chopped 4-6 chicken thighs to a casserole dish.
2. Mix together 400ml coconut milk, 4 tbsp curry paste and 2 cups stock, then pour over the top.
3. Cover and bake in a preheated oven at 180°C for 40 minutes.
