The pairing of chocolate and coffee is not only scientifically but also tastefully remarquably interesting. The presence of tannins in both coffee and chocolate can mask or sublime some flavors for several seconds depending the order of tasting both. For instance, when you first eat chocolate, the tannins within the chocolate will partly saturate your taste buds on your tongue, and emphasize the other characteristics of your coffee. The darker your chocolate, the stronger this effect will be experienced.
