Campfire bannock. If you’ve never made it on a trip, this is your sign.
The recipe is stupid simple. Pre-mix your dry ingredients at home, throw the bag in your pack, and when you’re ready just add water and fat. That’s the whole thing.
We went with cinnamon, a pinch of salt, and some dried rosemary. Sounds weird, but works great.
The recipe:
1 cup all-purpose flour
1 tsp baking powder
¼ tsp salt
1 tsp cinnamon
½ tsp dried rosemary
1 tbsp fat (butter, bacon grease, whatever you’ve got)
½ cup water
Mix until the dough is soft but not sticky. Shape it into a flat circle about an inch thick. Cook on low heat (hot coals, not a flaming fire) for 5 to 7 minutes per side until golden brown. Don’t rush it or you’ll burn the outside and eat raw dough in the middle.
A few things worth knowing:
Coarse crumbs before you add water means you mixed the fat in right. Add the water slowly, you can always add more but you can’t take it back. Low and slow is the only way to cook this. If the pan’s too hot, pull it off the coals for a bit.
Pairs well with whatever else you’ve got going. Or just eat it standing up at the fire. No judgment.
