Been a bit absent recently, it's been so busy with hospitality reopening and work has been non stop. Great to see, and an amazing feeling to be bouncing back as an industry. But also been feeling tired and a bit overwhelmed at times. Such is the territory.

And the reminder today that 3 years ago this legend and Antony Bourdain left us is a short, sharp, shock to take care of yourself and each other. Such a charismatic and flawed character, who gave so much, expanded our horizons and open our eyes. But all the time fighting his own demons.

No two people are the same and struggles can be hiding in plain sight. Check in on yer mates and family, it's been a crazy old time and we arent out of it yet. Look after each other.

Hospitality isn't about pots and pan's, it's about people.

From today, 10% of all proceeds from this tee will go to hospitality and mental health causes. Forever.

Who's missing?

Who would you all like to see added to the collection?

We have so many more personal heroes in mind to be celebrated, the list could go on.

But who has made an impact on you, epitomises and embodies hospitality? Current or past? What makes an icon?

We dont always celebrate people enough in their lifetime. A legacy doesn't have to be something we leave, but something we forge and create by out actions and impressions on those around us.

Bernard Loiseau.

If ever there were a more beautiful and tragic story of passion and obsession around food, it has not been written.

Bernard Loiseau was as immensely talented as he was kind and generous. Full of life and personality, owner of a beautiful restaurant with rooms, winner of 3 Michelin stars and family man.

But the drive, determination and search for perfection hid an insecure soul, which sadly led to this genius taking his own life for fear of losing status. Only solidifying his legend and respect amongst his peers even more.

The Perfectionist: Life and Death in Haute Cuisine by his friend Rudolph Chelmisky beautifully captured his dream and pursuit of the unobtainable. A must read. It shows both sides of where our industry and its desires can take us. A timely reminder of what can lie beneath a seemingly perfect facade. A judgement on what sacrifices chefs make to offer up their heart on a plate.

I would have lived to have met the man to have a glimpse in to his mind.
