From the garden to the olive grove, the menu evolves day by day according to the land surrounding the masseria, with many ingredients sourced there and from small local producers. "My goal was also to narrate this incredible magic and privilege we have working here, and to tell this story to our guests."⁠

"Before we designed anything, not being from here, we really searched for the essence of a Puglian masseria," recalls Carlo Lanzini. Traditional masserias tend to be full of ornaments — for Carlo and Giorgia, co-owners of , they were missing the minimalism and cleanness they wanted to achieve.⁠

Together with architect Andrew Trotter, Carlo drafted Masseria Moroseta: six rooms accessed from the courtyard that opens onto the communal space, with large windows overlooking the pool and garden. Clean lines, reduced to the essential. And with an emphasis on sustainability.⁠

“You really feel like you are at home more than you are in a hotel. And that’s exactly what I wanted,” says Masseria Moroseta’s founder Carlo Lanzini.

With a maximum of 12 guests at a time — a decision first made out of necessity, intimacy became the masseria’s defining strength. The kind you can only find in an intentionally curated universe. “We’ve had guests who met here over dinner and ended up traveling the world together. Many return every year or every other year, some end up buying property in the area,” Carlo reflects.

At Masseria Moroseta, attention to detail runs through everything. “Quality to me is in the details,” says Carlo Lanzini.

It’s the accumulation of small, deliberate choices that creates something you feel the moment you arrive. The way the large windows frame the olive grove so it feels like part of the room. The plating that reflects what the garden offered that morning. The communal table where strangers end up sharing more than a meal.
