Hey...

300ml double cream,
3 tbs icing sugar
Splash of vanilla extract
8 pieces of thick brioche bread
Punnet of strawberries, hulled and cut in half.

- Whip first 3 ingredients together.
- Spread whipped cream on brioche.
- Layer strawberries on four pieces of brioche - cut side out.
- Sandwich together with the other side of the brioche.
- Cut in half.

Made a butternut squash, lentil and spinach curry last night. Made extra so I could make some pies today. 😍
