For the latest instalment in our series, Leanne Loughran McAuley, aka , joined us in our World of Home destination to create a comforting one-pot Tarragon Roast Chicken, featuring tender roast chicken in a rich, creamy tarragon sauce.

Perfect for sharing with family and friends, this bistro-inspired dish is one to return to time and time again.

Recipe: Creamy One-Pot Tarragon Roast Chicken

1 whole chicken (approx. 1.6kg)
1-2 medium onions, roughly chopped
1 bulb fresh fennel, chopped (or 2–3 sticks celery)
1 tbsp olive oil
50g butter
Sea salt
1 tbsp fennel seeds
100ml white wine
1 heaped tbsp Dijon mustard
1 tbsp plain flour
400ml good-quality chicken stock
2 tbsp fresh or dried tarragon
Juice of 1 lemon
200ml double cream
Olive oil spray or drizzle
Freshly ground black pepper
