Arriving to Ireland in 1990 I have been involved in and experienced the great changes within the Irish Hospitality Industry and the Irish Food Culture throughout the last 25 years. Ireland has been transformed and evolved through the hard work of many people in the industry who have been passionate about the country, its produce and people.

25 Years ago Ireland had no real food scene or even a food product to highlight to the international markets which has completely changed. Now Ireland can be regarded as food destination with many establishments and chefs to showcase and we can be proud of Ireland as a country for its food and services.

Join us for an evening of food and fashion at the Clayton Hotel. Finn Ni Fhoalin of Finns World fame will be organising a cooking demo using an array of surprising ingredients to create amazing healthy dishes full of flavour and inspired by the sea here in the North West.

Paola and Andrew are Coffee enthusiasts. They recently moved from Columbia to Sligo to set up Carrow Coffee Roasters, bringing top quality beans to the North West of Ireland. Paola and Andrew will be speaking about what makes the perfect cup of sustainable coffee and demonstrating the process of the grind and brew.

Lough Gill Brewery will be providing samples of beers including Thieving Bastard, Heinoweiser, MacNulty, Round the Clock and Andersons Heritage Ale. James Ward and his master brewer a Sioux Indian from Montana(we're not kidding!) produce some amazing award winning brews and visitors will have the chance to sample and buy if they wish.

Dr Prannie Rhatigan - Dillisk & Whiskey Demonstration

Irelands best known and pioneering seaweed expert Dr Prannie Rhatigan will be offering visitors a unique experience pairing freshly hand prepared Dillisk Crisps with 14 year old Single Malt from Sligo's own Lough Gill Distillery set in the grounds of the historic Hazelwood House, Sligo. Sample the best of produce from Sligos producers, restaurants, cafes including venison, oysters, chocolates and so much more.

We will have the local designers showcasing their collections as well as makeup demonstrations for the ladies.

Join us for an evening of food and fashion at the Clayton Hotel. We will have local designers showcasing their collections as well as a make-up demonstration for the ladies.

This is an event for all to enjoy!

Finn will be organising a cooking demo using an array of surprising ingredients to create amazing healthy dishes full of flavour and inspired by the sea here in the North West.

Finn is a cookbook author, private chef and marine scientist. She lives on the wild west coast of Ireland where she surfs, cooks and practices the idea of doing what you love and loving what you eat. Finn draws on her personal experience as a coeliac, her background in marine science and her culinary arts training to create dishes - inspired by the sea and her active life - that are delicious, easy to make and affordable.

Her mission is to ensure that gluten free (and healthy!) doesn't mean you're comprising on taste, spending hours in the kitchen or tons of money on your groceries. Her bestselling cookbook Finn’s World was released in April of 2017.

The event takes place at the Clayton Hotel from 7.30pm on Friday 3rd and is Free Entry for those attending the summit.

Check out this lovely recipe from our Speaker Prannie Rhatigan of the Seaweed Kitchen.

For something quick, easy and different, try this seafood crêpe, created in Malaysia.

Wear gloves and handle the nettle plants with care – they sting. Pick only the fresh young leaves at the top of the nettle. Never use a nettle that is in flower. Remove stalks and wash leaves.

Seaweed used: Nori

Serves 2 – 3 (makes 3 crêpes)

Recipe doubles easily to make 6 crêpes
For the the crêpes

3 teaspoons light soy sauce
2 teaspoons sesame oil
1 clove garlic, crushed
6 medium sized prawns, shelled and cubed,
weight – about 55g (2oz)
3 eggs
3 teaspoons white flour, spelt works well
4 nori sheets, toasted and chopped finely
or pulsed in coffee grinder
80ml (3fl oz) water
25g (1oz) butter for cooking prawns
25g (1oz) butter or 3 teaspoons oil
for cooking crêpes
