Sesame & spring onion stir-fried udon with crispy tofu

Method
STEP 1
Drain and pat the tofu dry with kitchen paper. Cut into cubes, wrap in more kitchen paper, and place a heavy board over the top. Leave to drain for 15 mins.

STEP 2
Mix the cornflour, chilli flakes and ground peppercorns together in a bowl with a pinch of salt, then add the drained tofu. Toss well to coat.

STEP 3
Heat half the vegetable oil in a large non-stick frying pan over a high heat, and fry the tofu pieces for 5-6 mins until golden all over. Scoop out of the pan, and leave to drain on kitchen paper.

STEP 4
Add the remaining oil to the pan and stir-fry the spring onions and beans for 3-4 mins until tender and lightly golden. Pour a kettle of boiling water over the noodles in a sieve to loosen. Drain well, then tip into the pan. Fry for a few minutes until piping hot. Add the sesame oil and sesame seeds, and sizzle for a few seconds. Splash in the soy sauce, rice vinegar, then add the tofu. Toss well, then serve in bowls with a pinch of sesame seeds on top and more soy sauce on the side.

Black bean tostadas with avocado salsa

Method
STEP 1
Heat oven to 200C/180C fan/gas 6. Brush the tortillas with a little of the oil and place in a single layer on baking sheets. Cook for 8 mins until crisp.

STEP 2
In a large frying pan, heat the remaining oil. Add the onion and garlic, and cook for 5 mins. Add the spices, vinegar and honey. Cook for 2 mins more. Add the beans and seasoning, and heat through.

STEP 3
Remove from the heat and mash the beans gently with the back of your spoon to a chunky purée. Spread some beans over the crispy corn tortillas, scatter with your choice of toppings and add a spoonful of crème fraîche to cool down, or a splash of chipotle Tabasco to spice it up.

Tres leches cake (milk cake)

Method
STEP 1
Heat oven to 180C/160C fan/gas 4. Lightly oil and line the base and sides of a 20cm square cake tin.

STEP 2
Put the egg whites in a large bowl with a pinch of salt. Beat with an electric hand whisk until foamy, about 3 mins. Keep mixing while you add 150g of the sugar, a spoonful at a time, until thick and glossy.

STEP 3
In another bowl, mix the egg yolks, remaining sugar and vanilla (no need to clean the beaters first) for 2 mins, or until pale and foamy. Add the flour, baking powder and milk to the egg yolks, and use a spatula to fold everything together.

STEP 4
Add a large spoonful of egg white to the cake mix, beat together to loosen the mixture, then gently fold through the remaining egg whites with a large metal spoon (being careful not to over-stir so you don’t knock out too much air), until you have a smooth batter.

STEP 5
Pour into the tin, smooth the top and bake for 40-45 mins until a skewer inserted into the centre comes out clean. Mix together the evaporated milk, condensed milk and 3 tbsp of the cream.

STEP 6
Leave the cake to cool for 10 mins in the tin, then ease a knife around the sides. Poke holes over the surface with a skewer, then pour over half the milk mixture. After 5 mins or so, most of it should have soaked into the cake. Leave for another 5 mins, then transfer to a plate and pour over some of the remaining milk until it starts to leak a little. (Any leftover milk that won’t soak into the cake can be served on the side.) Leave to cool.

STEP 7
Whip the remaining cream and icing sugar together until holding soft peaks. Spread the cream over the cake and sprinkle with a little cinnamon. Can be made and chilled a day ahead. Serve in squares with any remaining soaking milk.

Mexican rice

Method
STEP 1
Heat the oil in a saucepan and sizzle the onion for 5 mins until just starting to soften. Add the garlic and cook for a minute more, then stir in the chipotle paste (if using) and the tomato purée and cook for a minute.

STEP 2
Add the tomatoes and simmer for a few minutes, then scatter the rice into the pan and stir, so it’s coated in the tomato mix. Pour over the hot stock, season, give everything another stir and bring to the boil, then cover the pan with a lid and turn the heat down to the lowest possible setting.

STEP 3
Gently simmer for 15-20 mins until all the stock has been absorbed and the rice is cooked through. Leave the rice to sit for a few mins off the heat, then stir through the coriander and serve.

Spicy beef taco bowl

Method
STEP 1
Heat the oil in a non-stick pan and fry the pepper for 5 mins until starting to soften. Add the beef, chipotle paste and spices, and cook, stirring, to break down the meat for a few minutes. Stir in the tomatoes, tomato purée, coriander stalks, 150ml water and some seasoning, then cover. Leave to simmer for 20 mins to cook through and reduce a little. Will keep chilled for up to three days, or frozen for up to three months. Defrost thoroughly and reheat until piping hot.

STEP 2
Meanwhile, toss the onions in the lime juice in a bowl and set aside to pickle.

STEP 3
When the mince is ready, warm the rice following pack instructions.

STEP 4
Tip the cooked rice into four serving bowls, then add the beef and top each one with a quarter of the black beans, cherry tomatoes and corn, half an avocado (fan out the slices, if you like), and the coriander leaves. Spoon the pickled onions on top along with any lime juice.

Easy chicken fajitas

Method
STEP 1
Heat oven to 200C/180C fan/gas 6 and wrap 8 medium tortillas in foil.

STEP 2
Mix 1 heaped tbsp smoked paprika, 1 tbsp ground coriander, a pinch of ground cumin, 2 crushed garlic cloves, 4 tbsp olive oil, the juice of 1 lime and 4-5 drops Tabasco together in a bowl with a big pinch each of salt and pepper.

STEP 3
Stir 2 finely sliced chicken breasts, 1 finely sliced red onion, 1 sliced red pepper and 1 finely sliced red chilli, if using, into the marinade.

STEP 4
Heat a griddle pan until smoking hot and add the chicken and marinade to the pan.

STEP 5
Keep everything moving over a high heat for about 5 mins using tongs until you get a nice charred effect. If your griddle pan is small you may need to do this in two batches.

STEP 6
To check the chicken is cooked, find the thickest part and tear in half – if any part is still raw cook until done.

STEP 7
Put the tortillas in the oven to heat up and serve with the cooked chicken, a bag of mixed salad and one 230g tub of fresh salsa.

Mexican fiesta rice

Method
STEP 1
Heat the oil in a large saucepan with a lid, then add the onion, pepper, garlic and cumin and sizzle gently for 8-10 mins until the vegetables are soft and golden. Stir in the tomato purée and smoked paprika and cook for 1 min, then stir in the rice.

STEP 2
Pour over the stock, then cover and bring to the boil. Stir quickly, then cover again and place on the lowest heat possible. Simmer for 10 mins. Turn off the heat and leave, covered, for a further 10 mins. If serving straightaway, stir through the coriander and spring onions; alternatively, leave the rice to cool, chill, then re-fry before serving and stir the coriander and spring onions through at the end.

Cheesy black bean quesadillas

STEP 1
Step 1
Hold the sieve in the sink and tip in the beans. Let the liquid from the can drain away, rinse the beans under cold running water and drain well. Tip the beans into the mixing bowl.

STEP 2

Mash the beans with the potato masher to make a lumpy texture.

STEP 3
Step 3
Place the box grater on your chopping board and carefully grate the cheese. Add the cheese to the mashed beans.

STEP 4
Step 4
Peel the papery outer skins off the spring onions so you’re left with just the shiny parts. Use the scissors to cut off the roots and about 2cm from the other end. Snip the spring onions into small pieces, about the size of a pea. Add the spring onions to the mixing bowl.

STEP 5

Use the scissors again to cut the coriander into small pieces. Don’t forget to use the stalks, too, as they contain lots of flavour. Add the coriander to the mixing bowl.

STEP 6

Use a teaspoon measure to measure ¼ tsp ground cumin and ½ tsp paprika, and add these to the bowl. Season the ingredients with salt and pepper and mix everything together.

Place a wrap on your board. Scoop half the bean mixture from the bowl onto one half of the wrap. Spread it out in an even layer, making sure you only cover one side. Close the wrap like a book, to cover the filling inside and make a semi-circle. Do the same with the other wrap and the rest of the filling.

Put a medium-sized frying pan on the hob. Lift one of the wraps into the pan, then turn the heat to low-medium. After 2 mins, use a fish slice to lift the wrap and check underneath. If it’s golden brown, it’s time to turn it over, if not, keep cooking, checking every minute or so until it’s ready. Use the fish slice to carefully flip the wrap over, then cook for another 2-4 mins on the other side until toasty brown. Turn off the heat and slide the quesadilla onto your chopping board. Use a pizza cutter or knife to cut it into wedges, then tuck in.

Piri-piri chicken with smashed sweet potatoes & broccoli

Method
STEP 1
Heat the oven to 180C/160C fan/gas 4. Toss the sweet potatoes with a generous drizzle of oil and some seasoning, and tip into a very large roasting tin. Push the potatoes to one end of the tin, then, in the other end, toss the chicken with the onions, spice mix, a drizzle of oil and some seasoning. Roast for 40 mins, stirring everything halfway through. Add the broccoli to the tin, drizzle with a little oil and season, then roast for 10-15 mins more.

STEP 2
Remove the chicken, onions and broccoli from the tin. Roughly mash the potatoes using a fork, making sure you incorporate all the chicken juices and spices from the pan. Spread the mash over the base of the tin, then top with the broccoli, chicken and onions and serve from the tin in the middle of the table.
