Cranberry Curd Tart

Ingredients
FOR CRUST

Pecan-Flecked Pie Dough
All-purpose flour, for dusting
FOR FILLING

5 cups (20 oz.) fresh or frozen cranberries
1 cup sugar
2 tsp. lime zest
1/4 cup fresh lime juice
1/2 cup (1 stick) unsalted butter, cut into small pieces, plus more for dish
2 large eggs
2 large egg yolks
Pinch of kosher salt
FOR PIE LEAVES

1 large egg, beaten
Sugar, for sprinkling
FOR SUGARED CRANBERRIES

1/4 cup sugar, plus 1/3 cup for tossing
1 cup (4 oz) fresh or frozen cranberries
FOR SUGARY PECANS

1 large egg white
1 cup pecan halves
2 tsp. sugar
Large pinch of kosher salt
TO DECORATE

Directions
Step 1
Make crust: Fit dough into bottom and up sides of 9-inch tart pan with removable bottom; trim and reroll excess and refrigerate until ready to use.
Step 2
Heat oven to 375°F. Press large piece of parchment paper into tart shell and fill with pie weights. Bake 15 minutes. Remove parchment and weights and bake until pastry feels sandy and just starts to turn golden, 10 to 15 minutes. Transfer to wire rack and lower oven temperature to 350°F.
Step 3
Make filling: In medium saucepan, bring cranberries, sugar, lime zest and juice, and 1⁄4 cup water to a boil on medium-high. Lower heat and simmer until berries start to burst, 8 to 10 minutes (a few more minutes for frozen berries).
Step 4
Strain mixture through large sieve into clean medium saucepan and press through gently, scraping underside into pan. Stir in butter to melt, then eggs, yolks, and salt. Cook on low, stirring constantly, until curd thickens slightly, 8 to 10 minutes (do not boil).
Step 5
Pour filling into prepared crust and bake until mostly set but still jiggles, 10 to 15 minutes. Transfer to wire rack, let cool to room temperature, then refrigerate at least 2 hours, up to overnight.
Step 6
Make pie leaves: Using leaf-shape cutter, cut out leaves from remaining dough and place on parchment. Use skewer to etch leaf veins and freeze 10 minutes. Slide parchment onto baking sheet, lightly brush with egg, and sprinkle with sugar. Bake, rotating pan halfway through, until golden brown, 10 to 15 minutes. Let cool.
Step 7
Make sugared cranberries: Line rimmed baking sheet with parchment paper. In small saucepan, bring 1/4 cup sugar and 1⁄2 cup water to a boil, swirling pan to melt sugar. Boil 1 minute, then remove from heat. Add cranberries, toss to coat, and strain over bowl. Working in batches, toss berries in 1/3 cup sugar. Transfer to prepared baking sheet and let cool and dry, at least 20 minutes. (Leftover syrup can be used in drinks.)
Step 8
Make sugary pecans: Heat oven to 300°F. Line rimmed baking sheet with parchment. In small bowl, whisk egg white with 1 tsp water until very frothy; transfer 11/2 teaspoons to medium bowl and toss with pecans to coat. Add sugar and salt and toss again. Arrange in single layer on prepared baking sheet and bake, stirring halfway through, until coating is dry and pecans are toasted, 10 to 15 minutes. Let cool.
Step 9
To decorate: Pipe or spoon whipped cream onto tart, then top with pie leaves, sugared cranberries, and sugary pecans.

Steak Au Poivre

Ingredients
1 Tbsp. olive oil
1 12-ounce strip steak (about 1 1/2 inches thick)
1 Tbsp. black peppercorns, coarsely crushed
Kosher salt
1 Tbsp. unsalted butter
1 large shallot, finely chopped
2 Tbsp. cognac
1/3 cup low-sodium chicken broth
1/2 cup crème fraîche
1 tsp. Dijon mustard
Rosemary Roasted Carrot Salad and baked potatoes, for serving
Directions
Step 1
Heat oven to 425°F. Heat oil in large skillet on medium-high. Season steak with crushed peppercorns and 1/2 teaspoon salt. Cook until well browned on each side, about 4 minutes. Transfer to rimmed baking sheet and roast until instant-read thermometer registers 125°F for medium-rare, 12 to 15 minutes. Transfer to cutting board and let rest at least 5 minutes before slicing.
Step 2
Meanwhile, pour off any fat from skillet. Add butter, shallot, and any peppercorns left over from seasoning and sauté on medium until shallot is tender, about 2 minutes.
Step 3
Add cognac and cook, stirring, until reduced, about 1 minute. Add chicken broth and simmer 1 minute. Whisk in crème fraîche and mustard and simmer until slightly thickened, 5 to 6 minutes. Season with salt if desired. Serve sliced steak with carrot salad and baked potatoes. Spoon sauce over steak.

Wild-Salmon Cakes with Quinoa Salad

Ingredients
1 lb. skinless wild salmon, cut into small chunks
2 green onions, sliced
1/2 tsp. grated orange zest
Kosher salt
2 tsp. extra-virgin olive oil
1/4 cup fresh basil, chopped
3 Tbsp. orange juice
3 Tbsp. sherry vinegar
extra-virgin olive oil
Freshly ground black pepper
5 cups cooked quinoa
5 cups packed mixed greens
Orange wedges, for serving
Directions
Step 1
In food processor, pulse salmon, green onion, and orange zest until finely chopped. Form into 8 cakes; freeze 10 minutes. Season with 1/4 teaspoon salt. In 12" nonstick skillet, heat 2 teaspoons olive oil on medium. Add cakes; cook 4 minutes per side.
Step 2
Meanwhile, in large bowl, whisk basil, orange, juice, sherry vinegar, 2 tablespoon olive oil, and 1/4 teaspoon each salt and pepper. Add quinoa and mixed greens, tossing to combine. Serve with salmon cakes and orange wedges, if desired.

Balsamic Chicken Caprese

Ingredients
1 Tbsp. olive oil
4 6-0z boneless, skinless chicken breasts (1 1/2 lbs total)
Kosher salt and pepper
1/4 cup balsamic vinegar
6 oz. fresh mozzarella, sliced
1/4 cup basil leaves
1 vine-ripe or heirloom tomato, sliced 1/4 in. thick
Directions
Step 1
Heat oven to 400°F. Heat oil in large ovenproof skillet on medium-high. Season chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper and cook until deep golden brown on 1 side, 4 to 5 minutes.
Step 2
Flip chicken and cook 1 minute. Reduce heat to medium, add balsamic vinegar and gently simmer until slightly thickened and syrupy, 1 to 2 minutes. Transfer skillet to oven and roast 10 minutes.
Step 3
Turn chicken to coat in vinegar, top with mozzarella and roast until chicken registers 165°F on instant-
read thermometer and cheese begins to melt, about 2 minutes.
Step 4
Serve topped with basil leaves and tomato and sprinkle with salt and pepper. Drizzle with any additional balsamic glaze from skillet if desired.

Best-Ever Marinated Flank Steak

Ingredients
CITRUS-GARLIC MARINADE

1 1/2 Tbsp. grated orange zest plus 1/3 cup orange juice
1 Tbsp. grated lime zest plus 2 Tbsp lime juice
2 Tbsp. olive oil
1 1/2 tsp. cumin seeds
2 cloves garlic, finely chopped
FLANK STEAK

1 1 1/2- to 2-lb beef flank steak
Kosher salt and pepper
Orange-Spiked Chimichurri, for serving
Grilled Broccoli, for serving
Directions
FOR MARINADE

Step 1
Combine all ingredients in a resealable plastic bag. Add steak, seal and turn to coat. Let sit at least 30 minutes or refrigerate up to 2 hours.
FOR STEAK

Step 1
Heat grill to medium-high. Remove steak from marinade, scraping off any large bits. Season with 1/2 teaspoon each salt and pepper and grill, covered, 4 minutes.
Step 2
Turn and grill, covered, to desired doneness, 3 to 5 minutes more for medium-rare (135°F), depending on thickness. Transfer to a cutting board and let rest 10 minutes before slicing. Serve with Orange-Spiked Chimichurri and Grilled Broccoli if desired.
