✨ OLD-FASHIONED APPALACHIAN APPLE STACK CAKE ✨
Oh, how sweet are the memories of Grandma’s kitchen! ❤️ The smell of cinnamon, apples, and homemade cake baking in the oven, while family gathered around the table, is a memory worth keeping alive.
This week, we’re taking a little trip back in time with a beloved old-fashioned mountain recipe! 🍎
🥣 GRANDMA’S APPLE STACK CAKE
Ingredients for the cake:
½ cup shortening or softened butter
1 cup brown sugar
2 eggs
½ cup molasses or sorghum syrup
½ cup buttermilk
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon salt
For the apple filling:
4 cups dried apples
3 cups water, adding more as needed
½ cup brown sugar
1 teaspoon cinnamon
👩🍳 LET’S GET BAKING!
1. Make the filling: Simmer the dried apples in water until soft. Mash them and stir in the brown sugar and cinnamon. Allow the mixture to cool.
2. Prepare the cake: Preheat your oven to 350°F. Cream the shortening and brown sugar together. Beat in the eggs, molasses, and buttermilk.
3. Add the dry ingredients: Stir together the flour, baking soda, cinnamon, ginger, and salt. Gradually mix into the wet ingredients to form a soft dough.
4. Bake the layers: Divide the dough into 5 portions. Roll each portion into a thin circle and bake on greased baking sheets for approximately 10–15 minutes, until set. Watch carefully, as baking times vary.
5. Stack it up! Once the layers have cooled, spread apple filling between each layer. Leave the top layer plain.
6. The old-fashioned secret: Cover the cake and let it rest for 24–48 hours in the refrigerator so the apple filling can soften the layers and blend those wonderful flavors. Bring to room temperature before serving.
