Parmesan Chicken Stuffed Peppers Recipe
INGREDIENTS
3 c. shredded mozzarella, divided
1/2 c. freshly grated Parmesan, plus more for serving
3 cloves garlic, minced
1 1/2 c. marinara
1 tbsp. freshly chopped parsley, plus more for garnish
Pinch of crushed red pepper flakes
Kosher salt
Freshly ground black pepper
12 oz. fresh or frozen breaded chicken, cooked according to package instructions and diced
4 bell peppers, halved and seeds removed
1/2 c.
DIRECTIONS
Preheat oven to 400º. In a large bowl, combine 2 cups mozzarella, Parmesan, garlic, marinara, parsley, and red pepper flakes and season with salt and pepper. Stir until combined, then gently fold in chicken.
Spoon mixture into halved bell peppers and sprinkle with remaining 1 cup mozzarella.
Pour chicken broth into baking dish (to help the peppers steam) and cover with foil.
Bake until peppers are tender, 55 minutes to 1 hour. Uncover and broil 2 minutes.
Garnish with parsley and more Parmesan before serving.

Peanut Butter No Bake Cookies

Ingredients

1/2 Cup Peanut Butter
1/2 cup butter
2 cups of granulated sugar
1/2 cup cold milk
3 1/2 cups quick cooking oats
1 tablespoon vanilla extract

Instructions

Add your butter, sugar and milk to a heavy bottomed pot, bring to a rolling boil and boil for 1 minute while stirring.

Take your pot off the heat and mix in your peanut butter, vanilla and oats.

4 large eggs 🥚
1 cup vegetable oil 🛢️
1 cup water 💧
1 tsp vanilla extract 🍦
For the Buttercream Frosting:

2 cups unsalted butter, softened 🧈
4 cups powdered sugar 🍩
2 tsp vanilla extract 🍦
2-4 tbsp heavy cream 🧴
Green food coloring 🎨 (for the tree color)

1 large egg
1 teaspoon vanilla extract

1 box (15.25 ounces) white cake mix
½ cup powdered sugar, for rolling
¼ cup holiday-themed sprinkles
📝 Directions:

1. Prepare the Dough:

In a large mixing bowl, beat the softened butter and cream cheese together until the mixture is smooth and creamy.
Add the egg, vanilla extract, and, if using, almond or orange extract. Mix until all ingredients are well incorporated.
Gradually add the white cake mix to the bowl, mixing on low speed until a soft dough forms.
2. Chill the Dough:

Crock Pot Green Enchilada Chicken Soup
Ingredients
2.5 lbs of boneless skinless Chicken Breasts or thighs
28 oz can of Green Enchilada sauce
24oz of Chicken broth
1 Cup half and half or heavy whipping cream
2 Cups Monterey jack cheese
4 oz cream cheese, cubed at room temp
4oz Green Salsa ( salsa verde)
Salt and Pepper to taste
Directions
1. In Crock Pot add Chicken breasts or thighs, green enchilada sauce and chicken broth...cook on low for 6-8 hrs
2. About 30 min before serving Remove Chicken and Shred. the add shredded chicken, Jack Cheese, Cream Cheese, 1/2 and 1/2 and green salsa to crock pot. stir until cheeses are melted. * you can add additional salsa for taste.
3. You can top with sliced avocado, Cilantro, green onion and sour cream.

Ingredients:

For the Macaron Shells:
- 3 large egg whites (room temperature)
- 1/4 cup granulated sugar
- 1 1/2 cups powdered sugar
- 1 cup almond flour
- Green gel food coloring

For the Buttercream Filling:
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1–2 tablespoons milk or cream
- 1 teaspoon vanilla extract
- Optional: edible glitter or sprinkles for decoration

Directions:

1️⃣ Prepare the Macaron Batter:
1. Sift powdered sugar and almond flour into a large bowl. Discard any lumps and set the mixture aside.
2. In another bowl, beat the egg whites with an electric mixer until soft peaks form. Gradually add the granulated sugar and continue beating until stiff, glossy peaks form.
3. Add green gel food coloring and gently fold to combine.
4. Carefully fold the dry ingredients into the meringue. Mix until the batter flows in thick ribbons when dripped from a spatula.

2️⃣ Pipe and Bake the Macarons:
5. Line baking sheets with parchment paper or silicone mats. Pipe circles in three sizes (small, medium, and large) to create tree layers.
6. Tap the trays on the countertop to release air bubbles. Let the piped batter rest for 30–60 minutes, or until a skin forms on the surface.
7. Preheat the oven to 300°F (150°C). Bake the macarons for 12–15 minutes, rotating the trays halfway through. Allow the shells to cool completely before removing them from the baking sheets.

3️⃣ Make the Buttercream Filling:
8. In a mixing bowl, beat softened butter until smooth and creamy. Gradually add powdered sugar, milk, and vanilla extract, beating until light and fluffy. Transfer the buttercream to a piping bag fitted with a small round tip.

4️⃣ Assemble the Macaron Trees:
9. Pipe a dollop of buttercream onto a large macaron shell. Stack with a medium-sized shell, add another dollop of buttercream, and top with a small shell.
