We had a pasta night!! 😍😍

Am I crazy for making 2 different types of pasta because each kid only likes one? Probably. Oh well. This is our air fryer chicken cutlets baked with cheese and homemade marinara sauce for a yummy chicken parm!! I made raviolis (frozen, not from scratch, not THAT ambitious..) and elbows for our little guy who somehow doesnt like raviolis. Who doesnt like raviolis anyway??? How is he my kid?? 😂

We LOVE Oatmeal!! ❤❤

I am introducing (should say reintroducing) oatmeal. Both kids used to love the fortified oatmeal as babies, but haven't been into it since. Full disclosure, I got the ones with dinosaur eggs in it 😂😂 It was a hit!!

The weather is starting to warm up! WE CANT WAIT for Spring and Summer to come so we can get out of this house and get outside!!

I need some good air fryer dinner recipes. We are on an Air Fryer Chicken kick lately!! Anyone have any suggestions?

Definitely feels lighter eating these than the ones fried in oil!! Still tasty too! This dinner was sweet peas, sweet potatoes (I am going to share this recipe soon, they are PHENOMENAL) and chicken cutlets. Topped with honey, MMMMM!!

Breakfast Time!! 🥞🍳🍓

Easily our best meal is breakfast. My kids like almost all breakfast foods. Today I went with some scrambled eggs, pancakes, and a mix of strawberries/blueberries. Yum!

Air Fryer Chicken Cutlets 👍👍

Today I wanted to share something I have been making recently. We have an air fryer and have been trying some new, oil free frying recipes. One of our favorites has always been chicken cutlets!!

These just coated wirh egg and breaded, put on a piece of tinfoil in the air fryer and cooked 5 mins each side. They came out great!! Served with some Mac N Cheese (duh) and apple sauce and we have a winner!

Literally no one ate this 😭😭😂😂

Okay thats a lie, my husband ate it but he would eat a stick if I cooked it properly.

My kids are just so it can be really discouraging at times trying to get them to eat newer/healthier foods. I keep reintroducing in hopes that they will maybe take to it. Oh well, perhaps they will finally like broccoli once they are ready to head off to college 😂

What are some strategies you use to get your kids to eat healthy foods they dont necessarily like?

Do you ever feel like you've run out of snack ideas?

Today I went with english muffins, rice cakes w/peanut butter, and apple sauce. RANDOM! Lol. Oh well, as long as they are eating I am a happy Mama.
