It’s been crazy busy around here lately but I haven’t stopped knitting, canning, dehydrating, or making medicine!

Here are just a few of the knitted items I made in the past couple of months.

Today I have more pulled pork in the canner to go along with pulled pork and collard greens that I canned earlier this month.

I currently have 4 more pounds of sliced beef curing to make more jerky (I made 4 pounds earlier this month).

My wonderful hubby also got me a freeze dryer for Christmas so in the very near future I will be posting about that new adventure.

My medicine making has slowed down in these colder months, but starting in the springtime, I will be back at it full force!

We also bought pigs to add to our farm for breeding and for meat.

See? Crazy busy!! Not to mention babysitting my 2 grandsons most weekdays!

All of this to say: are there any skills that you may want to know more about? If so, message me and I should be able to get you started at least!

When Mother Nature has confused the plants outside, you just roll with it! Making Forsythia (aka “Yellow Bell”), and wild violet teas tonight that will become delicious jellies tomorrow! Usually it’s around April before these bloom, but I don’t make the schedule, I just adapt. 🤷‍♀️ 💐

Do you have these “weeds” growing in your yard? These are called purple dead nettle. They are a very beneficial plant. They are high in vitamin C and are anti-fungal, anti-bacterial, and a mild antihistamine.

Uses:
-You can eat them raw (although they are a bit hairy.
-You can make them into a pesto or cook them like spinach or kale
-If you get a scratch, you take pick some of the fresh leaves, chew them up and apply them to the scratch to help stop the bleeding and use as an anti-fungal, anti-bacterial poultice.
-You can pick the leaves, place them in a single layer on paper towels and let them completely dry out and use the leaves for a tea. (Note: they are also a diuretic, and laxative, so use in small doses. Start with about 6 ounces of the tea and see how your body reacts)
-You can also make a tincture of the leaves. Pick fresh leaves and chop up finely until you have ¼ cup. Add these to a jar with a good lid and add ½ cup of 100 proof Vodka or Everclear. Keep in a dark area or cabinet, shake it every day or so, it’s most potent after 6 weeks. Only use a dropper full to start.

My latest project! It has taken longer than I wanted to get this first sock done, but I’m so happy with how it turned out! 😍 Now I will take a break and work on a baby blanket for grandson #2 due in July, then I’ll do the second sock. Just have to finish the pair by October for the county fair this year!

Here is the final product for the dehydrated grapefruit pulp. I put it in my coffee grinder and now it’s a fine powder. Just a tiny bit added to water has a strong grapefruit flavor so i I would call this a success!!

And speaking of dehydrating, we have 34 chickens, 14 of which are laying hens, 2 roosters, and the rest are too young to tell right now. With that many laying hens we get an over abundance of eggs. We have a couple of people we provide eggs for, but that still leaves us with more than we can eat. So I also dehydrate them. I usually do batches of 40 eggs at a time in the dehydrator (5 trays of 8 eggs each). I wash them, crack them into the blender and blend them, pour them onto the trays then dehydrate at 160° for 18-24 hours. Once they are dried. I blend them into a powder, then put them in vacuum sealer bags and vacuum seal them. To use them it’s 1 TBSP egg to 1 TBSP water. Mix well, then cook as usual! (Unless baking, then you don’t add any water, just 1 TBSP powdered egg for every egg called for in the recipe!
