Did you know? Clovers are in the pea family (Fabaceae), and like nearly all the plants in this family, they can ‘fix’ nitrogen by forming a symbiotic (mutually beneficial) relationship with soil bacteria.

How does this happen?
The first thing to recognise is there is a huge amount of nitrogen in the atmosphere. The air you breathe is actually mostly nitrogen – 78 percent nitrogen to be more specific. Legumes form a symbiotic relationship with a type of bacteria in the Rhizobium genus. These bacteria form nodules on the roots. The bacteria in these nodules take nitrogen from the atmosphere and put it into a form that the legume can use to make protein and grow. This process is known as nitrogen fixation.

Fixing nitrogen into the soil naturally fertilises the plants around it, eliminating the need for chemical fertiliser, making our world a healthier place (and it doesn’t cost anything)

Did you know Maple seed pods (Samaras) are edible and packed with protein? Pop the seed out of these tiny green gems straight from the tree for a trailside snack or bring them home for a tasty treat! Think edamame meets snap peas when sautéed. Pro tip: Harvest smaller, green pods for the best flavor. If they're bitter, try slow roasting for a sweeter outcome (250-300F for about 15 min). All Maple Trees have edible seeds so taste different varieties to find the best tasting seeds to you. Happy foraging friends!!

There is only one variety of crocus that produces the saffron spice .

Saffron crocus (Crocus sativus) stands out among various crocus varieties due to its unique role in spice production. While many crocus species contribute to the vibrant display of spring flowers, saffron crocus holds culinary significance. Saffron, derived from the crimson stigmas of its flowers, is a coveted spice known for its distinct flavor, aroma, and golden hue imparted to dishes.

Unlike ornamental crocus varieties primarily cultivated for their blossoms, saffron crocus is valued for its three red stigmas, commonly referred to as saffron threads. This spice has been prized for centuries in various cultures for its culinary, medicinal, and coloring properties.

Other crocus species, such as Crocus vernus or Crocus tommasinianus, contribute to the kaleidoscope of colors in spring gardens but lack the culinary significance of saffron crocus.

In essence, while all crocus varieties contribute to the visual splendor of gardens, saffron crocus stands alone as the source of one of the world's most prized and expensive spices, adding a unique touch to both culinary and cultural landscapes.
