A client recently brought me her two prized Victorinox Chef Knives, which had previously been sharpened by a local company. Upon inspecting the noticeable damage on both sides of each knife, I inquired about the cause and she mentioned that she thought it was a normal result of resharpening. I successfully removed the unsightly grind marks using 120, 240, 400, and 600 grit sandpaper, although unfortunately, the logos could not be saved. As I did not perform a complete refurbishment, which would have required substantially more time and polishing up to 3,000 grit, I did not charge her for the additional work. The company she used demonstrated inadequate expertise, resulting in the destruction of the knives' surfaces. Fortunately, the knives are now sharp and have an acceptable appearance. Picture #3 shows the result of the repair on the first knife vs the second prior to repair.
