Much laughter was had while Jordan was taste testing one of our new savory pastries! Salami, Cheddar, and Dijon Croissant Bread!

I unfortunately missed her best smiles because we were both too busy laughing....but these will give you the idea! 😊

And I got the best sign of approval I could possibly get! Not just the thumbs up, BUT even better!!! She asked if she could have the rest of the pastry!!!!! (It's not always easy when your Mom is forever asking you to try things!!!)!

Ugly. Unimpressive. Uninspiring.

BUT these might hands down be one of the BEST things we've ever made!

We've been working (with VERY little success) on croissants for quite some time now. Unfortunately, despite using all the techniques that worked so beautifully when I worked with wheat, my gluten free flours haven't held up once rolled. Completely melted, actually!

These were a sideways solution. A creative method that--while not an airy, honeycomb interior croissant--gave me something similar, yet perhaps even better!

These are the epitome of "pastry". Soft, chewy insides with an exquisitely flaky exterior with a hint of crust. Buttery and slightly salty against a sweet filling.

With EXTRA filling (chocolate or almond) because I will NEVER understand why giant croissants have a single thin stripe (baton) of chocolate. A cruel joke!!!

We'll debut these this weekend (with samples--because they taste way better than they look!!!)! Chocolate Croissant Breads and Almond Croissant Breads!
