Repost • CBS News Bay Area San Bruno convenience store Hangry Planet has built a dedicated clientele around its exclusively vegan food and beverage selection.

Hangry Planet CEO Bobak Bakhtiari said sales initially fell about 20% after the store went fully plant based before customers started finding the location. Sales have since climbed 30% with customers going out of their way to visit the convenience store.

At least twice a month, Sunnyvale resident Tyler MacNiven and his family drive 20 minutes out of their way to the gas station.

“A gas station convenience store that is entirely plant-based, you just don’t ever hear that marriage happening, and you might not expect that,” MacNiven said. “It really works out. I got to say, the baby is beautiful.”

Americans spent $7.9 billion on plant-based foods in 2025, about twice the $3.9 billion spent in 2017 according to the Good Food Institute.

tsubamesanjo_stories Have you heard of “kuruma-fu”? It’s a traditional Japanese plant-based protein made from wheat gluten.

There are many types of fu (wheat gluten), but kuruma-fu has long been a vital source of nutrition to help people get through the harsh winters of Japan’s snow country.

In Sanjo City, Niigata Prefecture, “Maruyone” .kurumafu has kept this tradition alive for over 140 years. In a workshop filled with steam and heat, artisans hand-wrap the dough around wooden rods.

“Wrap and bake, wrap and bake...”

This careful, repetitive process—done by hand, every single day—creates beautiful layers that look like tree rings.

But as eating habits have changed, fewer people are eating kuruma-fu today. The search continues for how to carry this unique food culture forward.
