Today, it’s all about Pair. Now, let me be clear: I’ve been drinking scotch for almost forty years. Yes, I started in my mother’s third trimester, so you could say the habit runs deep.
But here’s the question I want you to sit with: How many of you have ever truly paired your scotch, your bourbon, your rye, with fruits or nuts? Not as an afterthought. Not as a chaser. As a conversation.
I know. I used to scoff, too. A dram is a dram, I said. Neat or nothing.
Then Kola introduced us to this idea, pairing the peat, the smoke, the honeyed notes of a Highland malt with something as simple as a slice of green apple or a handful of toasted almonds. And I have to tell you… it really changed my life.
Suddenly, the scotch I’d known for decades revealed itself to me again. A Speyside with dried figs? The fruit lifted the vanilla. A smoky Islay with walnuts? The nut’s bitterness tamed the iodine into something almost elegant.
We got bolder. We put together a full charcuterie plate, aged Manchego, speck, cornichons, and a little honeycomb. And I have to tell you, again and again, it was astounding. The salt, the fat, the sweet, they don’t mask the whisky. They wake it up.
When you begin to Pair, with a capital P, you don’t want anything else. No mixers, no ice, no guilt. Just the stillness of discovery.
I’ve spent forty years chasing the perfect dram. I didn’t know I was supposed to chase what was beside it all along.
