Choose a Bakery for Your Wedding Cake.

This morning, a customer called wanting to order a wedding cake for October 16th—just ten days away. He had the following requirements:
- A 3-tier cake for 70 guests (excluding the top tier, which was to be saved for the couple's first-anniversary celebration next year).
- Heart-shaped, chocolate cake with chocolate buttercream filling.
- Black and white decor featuring black roses.
- Delivery to Scottsdale, Arizona.
After providing a quote: Our shop’s 3-tier cakes typically serve about 80 people (excluding the top tier). With a starting price of $5.75 per person, the base price—as advertised on our website—comes to $460.
The customer then complained that the price was too high, claiming someone else had quoted him only $300 for a 3-tier heart-shaped cake.
So, we parted ways, allowing him to order a cake within his preferred budget.

About an hour later, I came across a Facebook post by Shaun Walker featuring a photo of his three-tier wedding cake. The cake cost $400. It made me feel sad for the couple; sometimes, opting for a cheaper price turns a momentous, joyful occasion into an unhappy memory because of unskilled bakers. Banana Sponge Cake with Cream Cheese Filling
A customer called to place a custom order.
They wanted a banana sponge cake with a cream cheese filling, finished with fresh whipped cream on the outside to keep the sweetness in check. They wanted the cake to be incredibly soft, moist, and light.
And so, this banana cream cake was created.
To make a delicious banana cake, start by selecting two ripe, yellow bananas. Let them sit in a cool room for 2–3 days until black spots appear on the skin—that indicates they are perfectly ripe. Peel them, wrap them tightly in plastic, and freeze them overnight. The next morning, move the frozen bananas to the refrigerator to thaw; this process prepares the banana flavor for incorporation into the batter. Using the natural flavor of fully ripe bananas ensures your cake is delicious with a delicate banana aroma.
For the filling, whip the cream cheese until fluffy, then add powdered sugar and beat until the sweetness is just right; finish by adding a few drops of vanilla extract. Ta-da! You have a delicious cream cheese filling that balances the slight tang of the cheese with the creamy sweetness of sugar and vanilla. For the best result, slice the cake into three layers with two layers of filling; this creates a harmonious balance between the cake and the cream.
