with Honey and Rosemary

Pistachio Cranberry Cheese Log with Honey and Rosemary is a vibrant, creamy appetizer made with a tangy cheese blend, festive cranberries, crunchy pistachios, and aromatic rosemary, finished with a golden honey drizzle.
Ingredients
β’ 1 package (8 oz / 225g) cream cheese, softened
β’ 1/2 cup goat cheese or feta (for tang)
β’ 1 tsp garlic powder (optional)
β’ 1/2 tsp black pepper
β’ 1/3 cup dried cranberries, finely chopped
β’ 1/3 cup roasted pistachios, finely chopped
β’ 1 tbsp fresh rosemary, finely minced
β’ 2β3 tsp honey, for drizzling
β’ Extra rosemary sprigs, for garnish
Instructions
1. In a medium bowl, combine softened cream cheese and goat cheese until smooth.
2. Add garlic powder (if using) and black pepper, and mix well.
3. Transfer cheese mixture onto parchment or plastic wrap and shape into a log.
4. Chill the log for 20 minutes in the refrigerator to firm up.
5. Meanwhile, mix cranberries, pistachios, and minced rosemary on a plate.
6. Unwrap chilled cheese log and gently roll it in the coating mixture.
7. Press to adhere evenly on all sides.
8. Transfer to a serving board, drizzle with honey, and garnish with rosemary sprigs.
9. Serve with crackers, crostini, or fruit slices.
Notes
β Make ahead up to 3 days. Add coating and honey just before serving.
β Feta can replace goat cheese for a saltier finish.
β Almonds or pecans can substitute pistachios if needed.
β Serve with gluten-free crackers to make it celiac-friendly.
β Not suitable for freezing due to the soft cheese texture.
