Lasagna Bolognese for the Freezer & Dinner... So yummy and easy🤤
This Bolognese sauce was made last month and then frozen in a gallon bag, double wrapped. It was pulled out the night before to thaw.
Preparation today was easy, the only things that needed to be cooked were noodles and a fresh Bechamel sauce. To save time today I used boxed noodles instead of homemade. The Bechamel sauce was made the traditional way with a touch of nutmeg and a sprinkle of Parmigiano-Reggiano.
For our family only the very top was lightly sprinkled with whole milk mozzarella cheese.

Vegetable and Kimchi Pancakes with Soy Dipping Sauce.
These simple yet delicious pancakes are full of shredded vegetables and chopped up winter (sour) kimchi. The kimchi and kimchi juice gives it a slightly fermented umami flavor.
You can add your your favorite vegetables, but our family prefers shredded zucchini, long sliced green onions, thin sliced sweet onion and chopped kimchi.

Homemade Dark Brown Sugar
Never run out of this baking staple!
All brown sugar is is a mixture of white sugar and molasses.
For this dark mixture I use 8 cups of white sugar with 1 cup of molasses.
Homemade brown sugar is more moist and richer in flavor and does not seem to dry out as quickly or easily as store-bought sugar. I believe that is due to the freshness and the fact that it is not been sitting on the shelves or any warehouse for so long.
Desserts and drinks made with homemade brown sugar have a richer deeper flavor and for me have a nicer chew or texture.

Raspberry Shortcake with homemade Butter Pound Cake
Homemade Pound Cake, Fresh Organic Raspberries, Homemade Raspberry Sauce, drizzled with Heavy Cream (no sugar or whipping needed!)
The cream does not need to be sweetened due to the sweetness of the raspberry sauce and the fresh raspberries.
However, if you like whipped cream, it's great that way too.

What is the difference between a pecan pie and a pecan tart?
Well for me it's the amount of goo. With a pie there is a thick layer of Goo beneath the nuts. With my tart, there is very little goo, more of a chewy, caramelized center that is combined with the nuts. Overall that gives this tart a nuttier, chewier, more caramelized mouthfeel and flavor.

Chili Relleno Casserole
Roasted and peeled peppers, stuffed with thick slices of Monterey Jack cheese. Then layered between whipped eggs on top of a layer of homemade red sauce. Topped with more cheese! 🧀
