Air fryer gnocchi with pesto dip

Ingredients
2 x 400g packs fresh gnocchi
2 tbsp olive oil
160g/5⅔oz mayonnaise
3 tsp pesto
salt and freshly ground black pepper

Method
Preheat the air fryer to 180C. Toss the gnocchi with the oil in a bowl and season well with salt and pepper. Cook in the air fryer for 20 minutes, turning halfway, until crispy and lightly golden.
Meanwhile, mix the mayonnaise and pesto together in a small bowl. Serve alongside the gnocchi with some cocktail sticks to skewer the gnocchi for dipping.

Air fryer halloumi

Ingredients
cooking olive oil spray
250g/9oz halloumi, cut into 1cm/½in slices and patted dry on kitchen paper
½ tbsp runny honey (optional)
pinch chilli flakes, to serve (optional)
lemon wedges, to serve (optional)

Method
Heat the air fryer to 200C.
Spray the bottom of the air fryer basket with oil spray and arrange the halloumi slices in a single layer (you will probably need to work in batches). Cook for 10 minutes at 200C, turning the pieces over after 5 minutes. Repeat until all the halloumi slices are cooked, keeping each batch warm by covering with a tea towel on a warm plate.
For the optional honey glaze, drizzle the cooked halloumi slices with the honey and air fry for a further minute, honey-side up.
Serve immediately with the chilli flakes lemon wedges on the side, if you like.

Bhaji means ‘fried vegetables’ in Hindi – it doesn’t have to be a crispy onion snack – and this mushroom bhaji is a quick, easy and colourful vegan curry dish for a midweek meal or Friday night treat. Serve with freshly cooked basmati rice or flatbreads and lime wedges.
